Apple Fritters

1 1/2 cups all-purpose flour

1 Tablespoon Sugar

2 teaspoons baking powder

1/2 teaspoon of salt

2 beaten eggs

1 tablespoon EVOO

3 cups finely cut apple peeled

Sift together dry ingredients. Blend eggs and oil and milk add dry ingredients all at once & mix until just moistened. Stir in apple chunks.

Drop from tablespoon into deep, hot fat 375’. Fry until puffy and golden 3-4 minutes; turn once. Drain on paper Towels.

Great dipped in maple syrup
