Bruschetta

1 1/2 cups zucchini

1 cup of celery

3 Scallions cut up with greens

2 cups of chopped tomatoes

1 loaf of Italian bread cut in slices

Balsamic vinegar- to taste

Salt & Pepper

Blue Cheese of parmesan

Lightly sauté onions, celery & tomatoes with balsamic. Toast the bread-both sides under broiler. Add zucchini to sauté pan just until caramelized and vinegar has thickened.
