Potato Soup

6 Medium size peeled potatoes

1 Med white onion chopped

2 Bay leaves

1 can evaporated milk

Boil potatoes and onion with bay leaves until potatoes are done. Remove bay leaves. Beat mixture until creamy and no lumps are prevalent. Add evaporated milk and reduce heat to low. Serve topped with bacon bits and parsley sprigs or a bit of cheese.

You might try adding 1/2 cup of sour cream to change the flavor a bit
