Salmon Croquettes

28 oz of Canned Pink Salmon well drained
1 cup chopped celery
1 cup chopped onion
2 eggs

Mix together with hands until well incorporated. Form into small patties
Heat 1/4 cup of EVOO in Cast iron skillet over medium heat. Place patties in pan and cook until golden brown.
