Skillet Cornbread

1/4 cup of EVOO
1 cup of flour
1 cup of corn meal
1/4 cup sugar
4 teaspoons of baking powder
3/4 teaspoon of salt
2 eggs
1 cup of milk
1/4 cup of EVOO for the skillet

Pour skillet oil into pan and place into preheated 425 oven while you are making the batter.
Mix in bowl the remaining ingredients. Don’t over beat!
Pour into skillet and bake for 25 minutes or test knife comes out clean and top is browned.
